Pumpkin pie is the easiest to make, and will impress your guests - if that’s what you’re going for. I never used to enjoy pumpkin pie (a texture thing) until I tried this one. I'm sold.
1/3 cup chopped pecans
1/3 cup brown sugar
2 tablespoons butter, softened
1 9-inch unbaked pie shell
2 eggs, beaten
1 cup cooked pumpkin (you can make your own or buy it canned)
2/3 cup brown sugar
1 tablespoon all-purpose flour
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/2 teaspoon ginger
1/4 teaspoon cloves
1/8 teaspoon mace or 1/2 teaspoon ground nutmeg
1 cup evaporated milk
Preheat oven to 450˚. Combine pecans, 1/3 cup brown sugar and butter. Press into bottom of pie shell. Bake 10 minutes. Combine eggs and pumpkin. Add 2/3 cup brown sugar, flour, salt, spices and milk. beat until smooth and creamy. Pour into partially baked pie shell. Bake 45 minutes at 325˚. It’s done when an inserted butter knife comes out clean.
