This weekend my pistachio-loving friend came over and we made a delicious cake together. She's a person who also bakes a lot, but she puts more education and research into it than I do. Luckily I wasn't intimidated because she's not like that. On to the recipe.
Cake
1 box yellow cake mix
1 box (3.4 oz) pistachio instant pudding mix
1 cup water
1/3 cup vegetable oil
4 large eggs
1 cup sour cream
1 teaspoon almond extract
3/4 cup well-chopped pistachios
Beat together all the ingredients until a smooth and combined batter forms.
Bake according to package instructions.
Frosting
8 oz package cream cheese
1/2 cup butter
4 cups powdered sugar
1 tsp salt
2 tsp vanilla
